Ingredients:
- 1 tablespoon olive oil
- 8 Quorn sausages
- 1 red onion, sliced
- 3 garlic cloves, finely chopped or crushed
- ½ teaspoon chili flakes
- 2 x 400g tins chopped tomatoes
- 1 x 400g tin borlotti beans in water (or haricot, cannellini, or butter beans), drained
- 2 teaspoons oregano
- Salt and pepper, to taste
- Rice, mashed potatoes, baked potatoes, or crusty bread to serve
Instructions:
- Heat olive oil in a large frying pan over medium heat. Add Quorn sausages and fry until cooked through, about 5-7 minutes. Remove sausages from the pan and place them on a plate.
- In the same pan, add sliced onions. Cover and reduce heat; cook gently until starting to brown, about 5-10 minutes, stirring occasionally.
- While onions cook, slice sausages into 3 or 4 pieces. Add garlic and chili flakes; fry for 1 minute with the lid off.
- Add chopped tomatoes and borlotti beans (with water if needed) to the onion mixture. Stir in sausage pieces, oregano, and season with salt and pepper.
- Bring the mixture to a boil, then reduce heat and simmer uncovered for 10 minutes.
- Serve hot with your choice of rice, mashed potatoes, baked potatoes, or crusty bread.
