Ingredients:

  • 1 tablespoon olive oil
  • 8 Quorn sausages
  • 1 red onion, sliced
  • 3 garlic cloves, finely chopped or crushed
  • ½ teaspoon chili flakes
  • 2 x 400g tins chopped tomatoes
  • 1 x 400g tin borlotti beans in water (or haricot, cannellini, or butter beans), drained
  • 2 teaspoons oregano
  • Salt and pepper, to taste
  • Rice, mashed potatoes, baked potatoes, or crusty bread to serve

Instructions:

  1. Heat olive oil in a large frying pan over medium heat. Add Quorn sausages and fry until cooked through, about 5-7 minutes. Remove sausages from the pan and place them on a plate.
  2. In the same pan, add sliced onions. Cover and reduce heat; cook gently until starting to brown, about 5-10 minutes, stirring occasionally.
  3. While onions cook, slice sausages into 3 or 4 pieces. Add garlic and chili flakes; fry for 1 minute with the lid off.
  4. Add chopped tomatoes and borlotti beans (with water if needed) to the onion mixture. Stir in sausage pieces, oregano, and season with salt and pepper.
  5. Bring the mixture to a boil, then reduce heat and simmer uncovered for 10 minutes.
  6. Serve hot with your choice of rice, mashed potatoes, baked potatoes, or crusty bread.
