Ingredients:

  • 1 tablespoon olive oil
  • 300 g new potatoes, cubed
  • 1 small onion, finely sliced
  • 1 garlic clove, crushed or grated
  • 6 large eggs, preferably free-range or organic
  • 50 ml milk
  • 100 g cheddar cheese, grated
  • Salt and pepper to taste

Instructions:

  1. Chop new potatoes into 1 cm (½ inch) cubes. Boil the potatoes in salted water for 10 minutes or until tender.
  2. Heat olive oil in a medium frying pan. Add sliced onions and gently sweat until beginning to color (5-7 minutes). Add garlic and cook for another minute, then turn off the heat.
  3. Drain and steam-dry the cooked potatoes. Add potatoes to the sautéed onions and cook gently until slightly colored.
  4. In a bowl, whisk eggs with milk, grated cheese, salt, and pepper.
  5. Increase heat to medium and pour the egg mixture over the potato-onion mix. Stir gently to combine, then reduce heat to low and cook for 5 minutes.
  6. Turn on the grill (broiler) and place the frying pan under it for 5 minutes until golden brown.
