Ingredients:
- 4 large fresh strawberries, hulled
- 6 large fresh basil leaves
- 1/2 oz (15 ml) fresh lime juice
- 1/2 oz (15 ml) simple syrup (1:1 ratio)
- Sparkling water or Club Soda, to top
- 4 oz (120 ml) strong brewed black tea, cooled
- 2 oz (60 ml) peach nectar or purée
- 1/4 oz (7.5 ml) fresh lemon juice
- Pinch of ground cinnamon or cardamom
- Ginger ale or ginger beer, to top
- 4 thin slices English cucumber
- 8 small fresh mint leaves
- 1 oz (30 ml) grapefruit juice
- High-quality tonic water, to top
- Optional sweetener (Agave or Honey Syrup), to taste
Instructions:
- General Preparation: Chill glassware thoroughly. Brew tea for Mocktail 2 and allow it to cool completely.
- Mocktail 1: Basil & Strawberry Smash. Place strawberries and basil leaves into the bottom of a sturdy glass. Gently muddle the fruit and herbs just enough to release their juices and aroma.
- Mocktail 1 continued: Add lime juice and simple syrup. Fill the glass two-thirds full with ice. Stir briefly to chill the mixture, then top generously with sparkling water and garnish.
- Mocktail 2: Spiced Peach Iced Tea Refresher. In a mixing glass, combine the cooled tea, peach purée, lemon juice, and spice pinch. Add ice and stir until well chilled (about 20 seconds).
- Mocktail 2 continued: Strain the mixture into a tall glass filled with fresh ice. Top with ginger ale/beer and garnish.
- Mocktail 3: Cucumber Mint Zinger. Place cucumber slices and mint leaves into the bottom of a mixing glass. Lightly press (muddle) only 2-3 times to release oils and juice.
- Mocktail 3 continued: Add grapefruit juice and optional sweetener. Add ice and stir well to combine and chill. Strain into a tall glass filled with fresh ice. Top with tonic water and garnish.
