Ingredients:

  • 4 ears of corn, husks removed
  • 2 tablespoons vegetable oil
  • 1/2 cup mayonnaise
  • 1/4 cup Mexican crema or sour cream
  • 1/4 cup finely grated cotija cheese
  • 1 lime, zested and juiced
  • 1 clove garlic, minced
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and freshly ground black pepper to taste
  • 1/2 cup finely grated cotija cheese
  • 2 tablespoons chili powder
  • 1/4 cup chopped fresh cilantro
  • Lime wedges, for serving

Instructions:

  1. Preheat grill to medium-high heat. Brush corn with vegetable oil.
  2. Grill corn, turning occasionally, until kernels are lightly charred and tender.
  3. In a medium bowl, whisk together mayonnaise, crema (or sour cream), 1/4 cup cotija cheese, lime zest, lime juice, garlic, cayenne pepper (if using), salt, and pepper.
  4. Generously spread the elote sauce over the grilled corn.
  5. Sprinkle remaining cotija cheese and chili powder over the corn. Garnish with fresh cilantro.
  6. Serve hot with lime wedges.
