Ingredients:
- 4 ears of corn, husks removed
- 2 tablespoons vegetable oil
- 1/2 cup mayonnaise
- 1/4 cup Mexican crema or sour cream
- 1/4 cup finely grated cotija cheese
- 1 lime, zested and juiced
- 1 clove garlic, minced
- 1/4 teaspoon cayenne pepper (optional)
- Salt and freshly ground black pepper to taste
- 1/2 cup finely grated cotija cheese
- 2 tablespoons chili powder
- 1/4 cup chopped fresh cilantro
- Lime wedges, for serving
Instructions:
- Preheat grill to medium-high heat. Brush corn with vegetable oil.
- Grill corn, turning occasionally, until kernels are lightly charred and tender.
- In a medium bowl, whisk together mayonnaise, crema (or sour cream), 1/4 cup cotija cheese, lime zest, lime juice, garlic, cayenne pepper (if using), salt, and pepper.
- Generously spread the elote sauce over the grilled corn.
- Sprinkle remaining cotija cheese and chili powder over the corn. Garnish with fresh cilantro.
- Serve hot with lime wedges.
