Ingredients:

  • 2 cups (250 g) all-purpose flour
  • 1 tablespoon (15 g) baking powder
  • 1/2 teaspoon (2 g) baking soda
  • 1 teaspoon (5 g) salt
  • 1/4 cup (60 g) unsalted butter, cold and cubed
  • 3/4 cup (180 ml) buttermilk, chilled
  • 1 tablespoon (15 g) unsalted butter, melted (optional, for brushing)

Instructions:

  1. Preheat your oven to 450°F (230°C).
  2. In a mixing bowl, whisk together flour, baking powder, baking soda, and salt.
  3. Add the cold cubed butter; use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
  4. Pour in the chilled buttermilk and stir gently until just combined. (Avoid over-mixing!)
  5. Transfer the dough to a floured surface.
  6. Gently knead the dough 4-5 times until it holds together. Pat into a rectangle about 1-inch thick, then fold it over itself three times.
  7. Roll the dough out to about 1-inch thickness again.
  8. Use a biscuit cutter or glass to cut out biscuits, pressing straight down without twisting.
  9. Place biscuits on a parchment-lined baking sheet, close but not touching.
  10. Brush tops with melted butter (optional) and bake for 15-20 minutes, until golden brown.
  11. Enjoy hot, straight from the oven!
