Ingredients:

  • 1 1/2 cups (190g) all-purpose flour, spooned and leveled
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon granulated sugar (12g)
  • 1 1/4 cups (300ml) milk (dairy or non-dairy)
  • 1 large egg
  • 3 tablespoons (45ml) unsalted butter, melted and slightly cooled
  • 1 teaspoon vanilla extract

Instructions:

  1. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  2. In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract.
  3. Gently pour the wet ingredients into the dry ingredients. Whisk until just combined. A few lumps are okay! Avoid overmixing.
  4. Heat a lightly oiled griddle or non-stick frying pan over medium heat. To test the heat, flick a few drops of water onto the surface; they should sizzle and evaporate quickly.
  5. Pour 1/4 cup of batter onto the hot griddle for each pancake.
  6. Cook for 2-3 minutes per side, or until golden brown and cooked through. Flip when bubbles start to form on the surface and the edges look set.
  7. Serve hot with your favourite toppings.
