Ingredients:
- 1 1/2 cups (190g) all-purpose flour, spooned and leveled
- 3 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1 tablespoon granulated sugar (12g)
- 1 1/4 cups (300ml) milk (dairy or non-dairy)
- 1 large egg
- 3 tablespoons (45ml) unsalted butter, melted and slightly cooled
- 1 teaspoon vanilla extract
Instructions:
- In a large bowl, whisk together the flour, baking powder, salt, and sugar.
- In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract.
- Gently pour the wet ingredients into the dry ingredients. Whisk until just combined. A few lumps are okay! Avoid overmixing.
- Heat a lightly oiled griddle or non-stick frying pan over medium heat. To test the heat, flick a few drops of water onto the surface; they should sizzle and evaporate quickly.
- Pour 1/4 cup of batter onto the hot griddle for each pancake.
- Cook for 2-3 minutes per side, or until golden brown and cooked through. Flip when bubbles start to form on the surface and the edges look set.
- Serve hot with your favourite toppings.
