Ingredients:

  • 1 cup cottage cheese (preferably large curd)
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup milk (or plant-based milk)
  • 2 tablespoons sugar (or sweetener of choice)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons unsalted butter (or oil for frying)

Instructions:

  1. In a large mixing bowl, combine cottage cheese, eggs, milk, vanilla extract, and sugar; whisk until smooth.
  2. In a separate bowl, combine flour, baking powder, and salt; stir to mix.
  3. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid overmixing.
  4. Preheat a non-stick skillet or griddle over medium heat and add butter, allowing it to melt and coat the surface.
  5. Pour approximately 1/4 cup of batter for each pancake onto the skillet.
  6. Cook until bubbles form on the surface and edges appear set (about 2-3 minutes).
  7. Flip and cook until golden brown on the other side (about another 2-3 minutes).
  8. Remove the pancakes from the skillet and keep warm while finishing the remaining batter. Serve warm.
