- 1 cup cottage cheese (preferably large curd)
- 1 cup all-purpose flour
- 2 large eggs
- 1/4 cup milk (or plant-based milk)
- 2 tablespoons sugar (or sweetener of choice)
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 2 tablespoons unsalted butter (or oil for frying)
Instructions:
- In a large mixing bowl, combine cottage cheese, eggs, milk, vanilla extract, and sugar; whisk until smooth.
- In a separate bowl, combine flour, baking powder, and salt; stir to mix.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid overmixing.
- Preheat a non-stick skillet or griddle over medium heat and add butter, allowing it to melt and coat the surface.
- Pour approximately 1/4 cup of batter for each pancake onto the skillet.
- Cook until bubbles form on the surface and edges appear set (about 2-3 minutes).
- Flip and cook until golden brown on the other side (about another 2-3 minutes).
- Remove the pancakes from the skillet and keep warm while finishing the remaining batter. Serve warm.
