Ingredients:

  • 1 cup all-purpose flour

  • 1 cup whole milk
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup mixed berries (strawberries, blueberries, raspberries)

Instructions:

  1. In a large mixing bowl, whisk together flour, sugar, baking powder, and salt.
  2. In a separate bowl, combine milk, egg, melted butter, and vanilla extract. Mix well.
  3. Gradually pour the wet ingredients into the dry ingredients, stirring until just combined.
  4. Preheat a non-stick skillet or griddle over medium heat and lightly grease it, if desired.
  5. Pour 1/4 cup of batter onto the skillet for each pancake.
  6. Cook until bubbles form on the surface and edges appear set, about 2-3 minutes.
  7. Flip and cook until golden brown on the other side, about 1-2 minutes.
  8. In a mixing bowl, combine heavy whipping cream, powdered sugar, and vanilla extract. Whip until soft peaks form.
  9. Gently fold in mixed berries.
  10. Stack pancakes on plates, generously top with berry whipped cream, and garnish with additional berries if desired.
