Ingredients:
- 1 cup all-purpose flour
- 2 tablespoons granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup whole milk
- 1 large egg
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- 1/2 cup mixed berries (strawberries, blueberries, raspberries)
Instructions:
- In a large mixing bowl, whisk together flour, sugar, baking powder, and salt.
- In a separate bowl, combine milk, egg, melted butter, and vanilla extract. Mix well.
- Gradually pour the wet ingredients into the dry ingredients, stirring until just combined.
- Preheat a non-stick skillet or griddle over medium heat and lightly grease it, if desired.
- Pour 1/4 cup of batter onto the skillet for each pancake.
- Cook until bubbles form on the surface and edges appear set, about 2-3 minutes.
- Flip and cook until golden brown on the other side, about 1-2 minutes.
- In a mixing bowl, combine heavy whipping cream, powdered sugar, and vanilla extract. Whip until soft peaks form.
- Gently fold in mixed berries.
- Stack pancakes on plates, generously top with berry whipped cream, and garnish with additional berries if desired.
