Ingredients:
- 3 large overripe bananas (375g)
- 1/4 cup unsalted butter, melted (56g)
- 1/4 cup plain Greek yogurt (60g)
- 1/2 cup coconut sugar or brown sugar (100g)
- 1 large egg (50g)
- 1 tsp pure vanilla extract (5ml)
- 1 1/2 cups all-purpose flour (190g)
- 1 tsp baking soda (5g)
- 1/2 tsp sea salt (3g)
- 1 tsp ground cinnamon (2g)
- 1/2 cup chopped walnuts or 70% dark chocolate chips (60g)
Instructions:
- Preheat oven to 325°F (165°C). In a large mixing bowl, mash the bananas until liquid-like with minimal lumps. Whisk in the melted butter, Greek yogurt, egg, sugar, and vanilla until the mixture is uniform.
- Sift the all-purpose flour, baking soda, salt, and cinnamon directly over the wet banana mixture. Using a silicone spatula, fold the ingredients from the bottom up until no white streaks of flour remain. Fold in walnuts or chocolate chips during the final three strokes if using.
- Grease a 9x5 inch loaf pan and line with parchment paper. Pour the batter into the pan and smooth the surface. Bake for 60 to 65 minutes until the top is deep mahogany and a toothpick inserted into the center comes out clean with only moist crumbs.
