  • 5-6 Tablespoons (75-90ml) lukewarm water, plus more as needed

  • Gel food coloring (optional, for coloring)

Instructions:

  1. Sift the powdered sugar into a mixing bowl. Add meringue powder and whisk to combine evenly.
  2. Gradually add lukewarm water to the dry ingredients, starting with 5 tablespoons. Add vanilla extract, if using.
  3. Beat on low speed until the mixture is combined. Then, increase the speed to medium-high and beat for 5-7 minutes, or until the icing forms stiff peaks. Visual cue: The icing should be glossy and hold its shape when you lift the beater.
  4. If the icing is too thick, add water, 1/2 teaspoon at a time, until you reach the desired consistency. If it's too thin, add sifted powdered sugar, 1 tablespoon at a time.
  5. Divide the icing into separate bowls. Add gel food coloring, one drop at a time, stirring well after each addition. Use a toothpick to transfer small amounts of coloring for precise control.
  6. Transfer the icing to piping bags fitted with desired tips.
  7. Decorate your cookies, cakes, or other treats.
  8. Allow the icing to dry completely before storing or packaging. Drying time will vary depending on humidity and icing thickness.
