- 5-6 Tablespoons (75-90ml) lukewarm water, plus more as needed
- 1 teaspoon (5ml) vanilla extract (optional)
- Gel food coloring (optional, for coloring)
Instructions:
- Sift the powdered sugar into a mixing bowl. Add meringue powder and whisk to combine evenly.
- Gradually add lukewarm water to the dry ingredients, starting with 5 tablespoons. Add vanilla extract, if using.
- Beat on low speed until the mixture is combined. Then, increase the speed to medium-high and beat for 5-7 minutes, or until the icing forms stiff peaks. Visual cue: The icing should be glossy and hold its shape when you lift the beater.
- If the icing is too thick, add water, 1/2 teaspoon at a time, until you reach the desired consistency. If it's too thin, add sifted powdered sugar, 1 tablespoon at a time.
- Divide the icing into separate bowls. Add gel food coloring, one drop at a time, stirring well after each addition. Use a toothpick to transfer small amounts of coloring for precise control.
- Transfer the icing to piping bags fitted with desired tips.
- Decorate your cookies, cakes, or other treats.
