Ingredients:

  • 1 lb 99% lean ground turkey
  • 1 tsp dried rubbed sage
  • 1 tsp smoked paprika
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 1 tsp kosher salt
  • 0.5 tsp black pepper
  • 6 large eggs
  • 1.5 cups liquid egg whites
  • 0.5 cup unsweetened almond milk
  • 0.25 cup fresh chives, minced
  • 0.5 tsp sea salt
  • 12 light English muffins (80-100 calories each)
  • 6 slices ultra-thin sliced sharp cheddar cheese

Instructions:

  1. Preheat oven to 180°C (356°F). Line a 13x18 inch rimmed baking sheet with a silicone mat or high-quality parchment paper.
  2. In a large bowl, whisk together 6 large eggs, 1.5 cups liquid egg whites, almond milk, minced chives, and sea salt until fully combined. Pour the egg mixture into the prepared baking sheet.
  3. Bake the eggs for 15–18 minutes until the center is set. Remove from the oven and let cool completely before cutting into 12 uniform rectangles or circles.
  4. While eggs bake, combine ground turkey with sage, paprika, garlic powder, onion powder, salt, and pepper. Form into 12 thin patties.
  5. Heat a large non-stick skillet over medium-high heat. Sear the turkey patties for 3-4 minutes per side until cooked through (internal temperature 165°F).
  6. Toast the English muffins until golden brown to create a moisture barrier.
  7. Assemble the sandwiches: Place one egg portion, one turkey patty, and a half-slice of ultra-thin cheddar on each toasted muffin. Allow to reach room temperature before wrapping in foil or parchment paper for freezing.
