Ingredients:
- 1 lb 99% lean ground turkey
- 1 tsp dried rubbed sage
- 1 tsp smoked paprika
- 0.5 tsp garlic powder
- 0.5 tsp onion powder
- 1 tsp kosher salt
- 0.5 tsp black pepper
- 6 large eggs
- 1.5 cups liquid egg whites
- 0.5 cup unsweetened almond milk
- 0.25 cup fresh chives, minced
- 0.5 tsp sea salt
- 12 light English muffins (80-100 calories each)
- 6 slices ultra-thin sliced sharp cheddar cheese
Instructions:
- Preheat oven to 180°C (356°F). Line a 13x18 inch rimmed baking sheet with a silicone mat or high-quality parchment paper.
- In a large bowl, whisk together 6 large eggs, 1.5 cups liquid egg whites, almond milk, minced chives, and sea salt until fully combined. Pour the egg mixture into the prepared baking sheet.
- Bake the eggs for 15–18 minutes until the center is set. Remove from the oven and let cool completely before cutting into 12 uniform rectangles or circles.
- While eggs bake, combine ground turkey with sage, paprika, garlic powder, onion powder, salt, and pepper. Form into 12 thin patties.
- Heat a large non-stick skillet over medium-high heat. Sear the turkey patties for 3-4 minutes per side until cooked through (internal temperature 165°F).
- Toast the English muffins until golden brown to create a moisture barrier.
- Assemble the sandwiches: Place one egg portion, one turkey patty, and a half-slice of ultra-thin cheddar on each toasted muffin. Allow to reach room temperature before wrapping in foil or parchment paper for freezing.
