Ingredients:
- 12 large eggs (680g)
- 1/2 cup milk (120ml)
- 1/2 teaspoon salt (3g)
- 1/4 teaspoon black pepper (1g)
- 1 tablespoon olive oil (15ml)
- 1/2 medium onion, diced (75g)
- 1/2 medium bell pepper, diced (75g)
- 1 cup cooked sausage, crumbled (150g)
- 1 cup shredded cheddar cheese (100g)
- 6 English muffins, split and toasted
- 2 tablespoons butter (30g), divided
- Optional: Hot sauce, avocado slices, tomato slices
Instructions:
- Sauté onion and bell pepper in olive oil until softened.
- In a large bowl, whisk together eggs, milk, salt, and pepper.
- Stir in the cooked sausage, sautéed vegetables, and cheddar cheese into the egg mixture.
- Pour the egg mixture into an oven-safe skillet. Cook over medium heat until edges begin to set.
- Transfer the skillet to a preheated oven and bake until the frittata is set and lightly golden brown.
- Let the frittata cool slightly, then cut into 6 equal wedges.
- Spread butter on the toasted English muffins. Place a frittata wedge on the bottom half of each muffin. Add optional toppings.
- Wrap each sandwich individually in parchment paper, then in plastic wrap or place in a freezer bag.
- Unwrap sandwich, heat in microwave or oven until heated thoroughly.
