Ingredients:

  • 12 large eggs (680g)
  • 1/2 cup milk (120ml)
  • 1/2 teaspoon salt (3g)
  • 1/4 teaspoon black pepper (1g)
  • 1 tablespoon olive oil (15ml)
  • 1/2 medium onion, diced (75g)
  • 1/2 medium bell pepper, diced (75g)
  • 1 cup cooked sausage, crumbled (150g)
  • 1 cup shredded cheddar cheese (100g)
  • 6 English muffins, split and toasted
  • 2 tablespoons butter (30g), divided
  • Optional: Hot sauce, avocado slices, tomato slices

Instructions:

  1. Sauté onion and bell pepper in olive oil until softened.
  2. In a large bowl, whisk together eggs, milk, salt, and pepper.
  3. Stir in the cooked sausage, sautéed vegetables, and cheddar cheese into the egg mixture.
  4. Pour the egg mixture into an oven-safe skillet. Cook over medium heat until edges begin to set.
  5. Transfer the skillet to a preheated oven and bake until the frittata is set and lightly golden brown.
  6. Let the frittata cool slightly, then cut into 6 equal wedges.
  7. Spread butter on the toasted English muffins. Place a frittata wedge on the bottom half of each muffin. Add optional toppings.
  8. Wrap each sandwich individually in parchment paper, then in plastic wrap or place in a freezer bag.
  9. Unwrap sandwich, heat in microwave or oven until heated thoroughly.
