Ingredients:
- 1 (12-14 inch) French baguette, halved lengthwise
- 1/2 cup basil pesto
- 1 cup cooked chicken, shredded or diced
- 1 cup shredded mozzarella cheese
- 1/4 cup sun-dried tomatoes, oil-packed, drained and chopped
- 2 tablespoons grated Parmesan cheese
- 1 tablespoon olive oil
- Pinch of red pepper flakes (optional)
- Fresh basil leaves, for garnish (optional)
Instructions:
- Preheat oven to 400°F (200°C). Lightly brush the cut sides of the baguette halves with olive oil.
- Evenly spread the pesto over the cut sides of the baguette halves.
- Sprinkle the shredded chicken evenly over the pesto. Top with mozzarella cheese, sun-dried tomatoes, and Parmesan cheese.
- Place the baguette halves on the baking sheet. Bake for 15-20 minutes, or until the cheese is melted, bubbly, and lightly golden brown, and the baguette is crisp.
- Remove from oven and sprinkle with red pepper flakes (if using) and fresh basil leaves. Slice and serve immediately.
