Ingredients:

  • 1 (12-14 inch) French baguette, halved lengthwise
  • 1/2 cup basil pesto
  • 1 cup cooked chicken, shredded or diced
  • 1 cup shredded mozzarella cheese
  • 1/4 cup sun-dried tomatoes, oil-packed, drained and chopped
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon olive oil
  • Pinch of red pepper flakes (optional)
  • Fresh basil leaves, for garnish (optional)

Instructions:

  1. Preheat oven to 400°F (200°C). Lightly brush the cut sides of the baguette halves with olive oil.
  2. Evenly spread the pesto over the cut sides of the baguette halves.
  3. Sprinkle the shredded chicken evenly over the pesto. Top with mozzarella cheese, sun-dried tomatoes, and Parmesan cheese.
  4. Place the baguette halves on the baking sheet. Bake for 15-20 minutes, or until the cheese is melted, bubbly, and lightly golden brown, and the baguette is crisp.
  5. Remove from oven and sprinkle with red pepper flakes (if using) and fresh basil leaves. Slice and serve immediately.
