Ingredients:
- 4 slices brioche bread (about 1 inch thick)
- 2 large eggs
- 1/2 cup (120ml) milk (whole or 2%)
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon vanilla extract
- 2 tablespoons unsalted butter, for cooking
- Optional toppings: maple syrup, fresh berries, powdered sugar
Instructions:
- In the shallow dish, whisk together the eggs, milk, cinnamon, and vanilla extract until well combined and slightly frothy.
- Dip each slice of brioche into the egg mixture, ensuring both sides are fully coated. Let the bread soak for about 30 seconds per side – this is crucial to getting the custardy inside, but don't soak it for too long or it'll fall apart.
- Melt one tablespoon of butter in the skillet over medium heat. Swirl to coat the pan evenly.
- Place 2 slices of soaked bread in the hot skillet. Cook for 2-3 minutes per side, or until golden brown and cooked through. Repeat with the remaining butter and bread. If the bread is browning too quickly, reduce the heat slightly.
- Serve immediately with your favorite toppings.
