Instructions:

  1. In the shallow dish, whisk together the eggs, milk, cinnamon, and vanilla extract until well combined and slightly frothy.
  2. Dip each slice of brioche into the egg mixture, ensuring both sides are fully coated. Let the bread soak for about 30 seconds per side – this is crucial to getting the custardy inside, but don't soak it for too long or it'll fall apart.
  3. Melt one tablespoon of butter in the skillet over medium heat. Swirl to coat the pan evenly.
  4. Place 2 slices of soaked bread in the hot skillet. Cook for 2-3 minutes per side, or until golden brown and cooked through. Repeat with the remaining butter and bread. If the bread is browning too quickly, reduce the heat slightly.
