Ingredients:

  • 1 1/2 cups (360 ml) Fresh Lime Juice (must be freshly squeezed)
  • 1 cup (240 ml) Filtered Water
  • 3/4 cup (180 ml) Light Agave Nectar
  • 1/8 teaspoon (0.6 ml) Fine Sea Salt
  • 1 teaspoon (5 ml) Orange Zest (optional, from one medium orange)

Instructions:

  1. Prep the Limes: To maximize juice yield, warm the limes briefly (10-15 seconds) in the microwave or roll them firmly on the counter. Halve the limes and extract 1 1/2 cups (360 ml) of fresh juice.
  2. Strain the Juice: Immediately strain the juice through a fine-mesh sieve or cheesecloth into a large bowl or measuring jug to remove all pulp and seeds.
  3. Combine Syrup Base: In a separate medium bowl, combine the 1 cup (240 ml) of filtered water and 3/4 cup (180 ml) of light agave nectar. Whisk vigorously for about 30 seconds until the agave nectar is fully incorporated into the water.
  4. Marry the Flavors: Pour the prepared agave-water mixture into the strained lime juice. Add the orange zest (if using) and the pinch of sea salt. Whisk everything together until completely homogenous.
  5. Chill: Pour the mix into an airtight glass container (750 ml capacity or greater). Chill in the refrigerator for a minimum of 30 minutes. This chilling process allows the acidity to soften and the flavours to meld beautifully.
  6. Storage and Use: Keep refrigerated and use within 7–10 days for peak freshness. Shake the mix well before serving. Use 90 ml (3 oz) of mix combined with 60 ml (2 oz) of your preferred Tequila for a classic Margarita.
