Ingredients:

  • 4 large ripe tomatoes (about 1.5 lbs / 680 g), sliced
  • ½ red onion, thinly sliced
  • 1 cucumber, thinly sliced (or quartered if small)
  • ½ cup (75 g) feta cheese, crumbled
  • ¼ cup (15 g) fresh basil leaves, torn
  • ¼ cup (60 mL) extra-virgin olive oil
  • 2 tablespoons (30 mL) balsamic vinegar
  • Salt and freshly ground black pepper, to taste

Instructions:

  1. Slice tomatoes into medium-thick slices, about 1/4 inch (0.6 cm) thick. Thinly slice red onion and cucumber.
  2. In a large mixing bowl, arrange the sliced tomatoes. Scatter the sliced onion and cucumber over the tomatoes.
  3. Sprinkle crumbled feta cheese and torn basil leaves over the salad.
  4. In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
  5. Drizzle the dressing over the salad just before serving. Toss gently to combine.
