Ingredients:

- ½ red onion, thinly sliced
- 1 cucumber, thinly sliced (or quartered if small)
- ½ cup (75 g) feta cheese, crumbled
- ¼ cup (15 g) fresh basil leaves, torn
- ¼ cup (60 mL) extra-virgin olive oil
- 2 tablespoons (30 mL) balsamic vinegar
- Salt and freshly ground black pepper, to taste
Instructions:
- Slice tomatoes into medium-thick slices, about 1/4 inch (0.6 cm) thick. Thinly slice red onion and cucumber.
- In a large mixing bowl, arrange the sliced tomatoes. Scatter the sliced onion and cucumber over the tomatoes.
- Sprinkle crumbled feta cheese and torn basil leaves over the salad.
