Ingredients:

  • 2 large ripe bananas (about 400g), peeled and sliced lengthwise
  • 1 cup (125g) all-purpose flour
  • 1/4 cup (30g) cornstarch
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1 cup (240ml) cold sparkling water or club soda
  • Oil for frying (vegetable or canola)
  • Powdered sugar, for dusting
  • Honey or chocolate sauce, for drizzling
  • Ice cream or whipped cream, for topping

Instructions:

  1. In a mixing bowl, whisk together flour, cornstarch, baking powder, salt, and sugar.
  2. Gradually add cold sparkling water, stirring until well combined and smooth.
  3. In a frying pan or deep fryer, heat oil over medium heat (about 350°F or 175°C).
  4. Dip the sliced bananas into the batter, ensuring they are fully coated.
  5. Carefully place the battered bananas into the hot oil and fry in batches until golden brown and crispy, about 3-4 minutes per side.
  6. Use a slotted spoon to remove and drain on paper towels.
  7. Dust the fried bananas with powdered sugar and serve immediately with honey or chocolate sauce, and your choice of ice cream or whipped cream.
