Ingredients:

  • 1 lb (450g) English cucumber, sliced into 1/8-inch rounds
  • 1 tsp (6g) Fine sea salt
  • 1/2 cup (60g) Cornstarch
  • 1/4 cup (30g) Panko breadcrumbs
  • 1/2 tsp (3g) Garlic powder
  • 1/4 tsp (1g) Smoked paprika
  • 1/4 tsp (1g) Black pepper
  • 3 tbsp (42g) Avocado oil

Instructions:

  1. Slice the cucumbers into uniform 1/8-inch rounds.
  2. Toss slices with sea salt in a bowl and let sit for 10 minutes to draw out moisture.
  3. Pat each slice aggressively with paper towels until no visible moisture remains.
  4. In a large bowl, whisk together cornstarch, Panko, garlic powder, smoked paprika, and pepper.
  5. Toss the dried cucumber slices into the mixture, shaking the bowl to ensure an even, thin layer of breading, then shake off any excess powder.
  6. For Air Fryer: Preheat to 375°F (190°C), lightly spray the basket and chips with oil, arrange in a single layer, and cook for 12–15 minutes, shaking halfway through.
  7. For Pan Fried: Heat oil in a skillet over medium-high heat and fry slices in batches for 2–3 minutes per side until mahogany-colored, then transfer to a wire rack.
