Ingredients:

  • 1 lb (450 g) fresh cod fillets
  • 1 tsp (5 g) salt
  • ½ tsp (2 g) black pepper
  • ½ cup (60 g) all-purpose flour
  • 1 large egg, beaten
  • 1 cup (100 g) panko breadcrumbs
  • ½ tsp (2 g) garlic powder
  • ½ tsp (2 g) paprika
  • 1 tsp (5 g) dried parsley (optional)
  • ½ cup (120 ml) vegetable oil or canola oil

Instructions:

  1. Pat fish dry and season with salt and pepper. Set up dredging stations with flour, beaten egg, and panko mixed with garlic powder, paprika, and parsley.
  2. Coat each cod fillet in flour, shaking off excess. Dip in beaten egg, allowing excess to drip off. Fully coat in panko mixture.
  3. Heat oil in a large skillet over medium-high heat until shimmering (around 350°F/175°C).
  4. Carefully add cod to the skillet. Fry for about 4 minutes on each side until golden brown and crispy. Cook in batches as necessary to avoid crowding the pan.
  5. Remove cooked cod and place on a paper towel-lined plate to drain excess oil. Serve immediately.
