Ingredients:
- 1 lb (450 g) fresh cod fillets
- 1 tsp (5 g) salt
- ½ tsp (2 g) black pepper
- ½ cup (60 g) all-purpose flour
- 1 large egg, beaten
- 1 cup (100 g) panko breadcrumbs
- ½ tsp (2 g) garlic powder
- ½ tsp (2 g) paprika
- 1 tsp (5 g) dried parsley (optional)
- ½ cup (120 ml) vegetable oil or canola oil
Instructions:
- Pat fish dry and season with salt and pepper. Set up dredging stations with flour, beaten egg, and panko mixed with garlic powder, paprika, and parsley.
- Coat each cod fillet in flour, shaking off excess. Dip in beaten egg, allowing excess to drip off. Fully coat in panko mixture.
- Heat oil in a large skillet over medium-high heat until shimmering (around 350°F/175°C).
- Carefully add cod to the skillet. Fry for about 4 minutes on each side until golden brown and crispy. Cook in batches as necessary to avoid crowding the pan.
- Remove cooked cod and place on a paper towel-lined plate to drain excess oil. Serve immediately.
