Ingredients:
- 1.5 lbs Sirloin steak, cut into 1-inch cubes
- 1 tbsp Avocado oil
- 1 tsp Kosher salt
- 1/2 tsp Coarsely ground black pepper
- 4 tbsp Unsalted butter, cubed and chilled
- 4 cloves Garlic, minced
- 1 tbsp Fresh rosemary, finely chopped
- 1 tbsp Fresh thyme, leaves stripped
- 1/2 tsp Red pepper flakes
- 1 tbsp Fresh Italian parsley, chopped
Instructions:
- Pat the steak cubes completely dry with paper towels. Season generously with kosher salt and black pepper.
- Heat avocado oil in a cast iron skillet over high heat until it begins to smoke. Add steak bites in a single layer, ensuring they do not touch. Sear undisturbed for 2 minutes to form a crust, then flip and sear for 1-2 minutes more.
- Reduce heat to medium-low. Move steak to one side and add chilled butter, garlic, rosemary, and thyme to the other side.
- Toss the steak bites continuously in the foaming herb butter for 1 minute, basting the meat with a spoon. Remove from heat immediately.
- Rest the steak bites for 3 minutes before serving to allow muscle fibers to relax and reabsorb juices. Garnish with fresh parsley.
