Ingredients:

  • 1 cup (225g) full-fat cottage cheese
  • 2 large eggs
  • 1/2 cup (65g) gluten-free all-purpose flour with xanthan gum
  • 1/2 tsp baking powder
  • 1 tsp garlic powder
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/4 tsp sea salt
  • 1 tbsp freshly grated Parmesan cheese
  • 1/2 cup low-moisture shredded mozzarella
  • 1/4 cup traditional pizza sauce

Instructions:

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet or pizza stone with parchment paper.
  2. Combine 1 cup (225g) cottage cheese, 2 large eggs, and all spices in a blender. Process until completely silky and smooth.
  3. Pulse in 1/2 cup (65g) GF flour and 1/2 tsp baking powder.
  4. Pour the mixture onto the parchment. Use a spatula to spread it into a 10 inch circle, keeping it about 1/2 cm thick.
  5. Bake for 15-20 minutes until the edges are golden brown and the center feels firm.
  6. Carefully flip the crust over. This is an unconventional trick that ensures both sides get direct heat.
  7. Spread 1/4 cup pizza sauce and sprinkle 1/2 cup mozzarella and 1 tbsp Parmesan.
  8. Return to the oven for 5-8 minutes until the cheese is bubbling and slightly charred.
  9. Let it sit for 3-5 minutes before slicing. This allows the proteins to firm up so the slice doesn't flop.
