Ingredients:
- 1 cup (225g) full-fat cottage cheese
- 2 large eggs
- 1/2 cup (65g) gluten-free all-purpose flour with xanthan gum
- 1/2 tsp baking powder
- 1 tsp garlic powder
- 1/2 tsp dried oregano
- 1/2 tsp dried basil
- 1/4 tsp sea salt
- 1 tbsp freshly grated Parmesan cheese
- 1/2 cup low-moisture shredded mozzarella
- 1/4 cup traditional pizza sauce
Instructions:
- Preheat your oven to 400°F (200°C). Line a large baking sheet or pizza stone with parchment paper.
- Combine 1 cup (225g) cottage cheese, 2 large eggs, and all spices in a blender. Process until completely silky and smooth.
- Pulse in 1/2 cup (65g) GF flour and 1/2 tsp baking powder.
- Pour the mixture onto the parchment. Use a spatula to spread it into a 10 inch circle, keeping it about 1/2 cm thick.
- Bake for 15-20 minutes until the edges are golden brown and the center feels firm.
- Carefully flip the crust over. This is an unconventional trick that ensures both sides get direct heat.
- Spread 1/4 cup pizza sauce and sprinkle 1/2 cup mozzarella and 1 tbsp Parmesan.
- Return to the oven for 5-8 minutes until the cheese is bubbling and slightly charred.
- Let it sit for 3-5 minutes before slicing. This allows the proteins to firm up so the slice doesn't flop.
