Ingredients:
- 3 large zucchini (approx. 2 lbs / 900g)
- 1 tbsp (15g) kosher salt
- 1 tbsp (15ml) olive oil
- 1 lb (450g) 80/20 ground beef
- 2 cups (480ml) crushed tomatoes
- 3 cloves (15g) garlic, minced
- 1 small (100g) yellow onion, finely diced
- 1 tsp (5g) dried oregano
- ½ tsp (3g) red pepper flakes
- 1 tbsp (15ml) olive oil
- 15 oz (425g) whole milk ricotta cheese
- 1 large egg, beaten
- ¼ cup (20g) grated Parmesan cheese
- 2 cups (60g) fresh spinach, chopped
- ½ tsp (3g) salt
- 3 cups (340g) shredded mozzarella cheese
- ¼ cup (20g) fresh basil, torn
Instructions:
- Slice zucchini lengthwise into 3mm thick planks. Lay them on paper towels, sprinkle with 1 tbsp kosher salt, and let sit for 15 minutes. Note: This is the most important step for a dry Lasagna.
- Pat zucchini dry with paper towels to remove brine. Toss with 1 tbsp olive oil and roast at 400°F (200°C) for 8-10 minutes until slightly softened.
- Heat 1 tbsp olive oil in a skillet over medium high heat. Brown the ground beef until mahogany colored, draining excess fat.
- Add diced onion and garlic, sautéing until translucent.
- Stir in crushed tomatoes, oregano, and red pepper flakes. Simmer on low for 15 minutes until thickened.
- Combine ricotta, beaten egg, Parmesan, chopped spinach, and salt in a bowl. Mix until fully emulsified.
- Spread a layer of meat sauce in a 9x13 inch baking dish. Layer roasted zucchini planks, then the ricotta blend, repeating until all ingredients are used.
- Top the Lasagna with shredded mozzarella and torn fresh basil.
- Bake 40 mins until the cheese is bubbly and mahogany colored.
