Ingredients:

  • 1 cup (240ml) whole milk, warmed to 105-115°F (40-46°C)
  • 2 ¼ teaspoons (7g or 1 packet) active dry yeast
  • ¼ cup (50g) granulated sugar
  • ½ teaspoon salt
  • ¼ cup (57g) unsalted butter, melted and cooled slightly
  • 2 large eggs, at room temperature
  • 3 ¼ - 3 ½ cups (406-438g) all-purpose flour, plus more for dusting
  • ½ cup (1 stick or 113g) unsalted butter, softened
  • ¾ cup (150g) packed light brown sugar
  • 2 tablespoons ground cinnamon
  • 4 ounces (113g) cream cheese, softened
  • ¼ cup (57g) unsalted butter, softened
  • 1 ½ cups (180g) powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons milk, to thin (optional)

Instructions:

  1. Combine warm milk, yeast, and a teaspoon of sugar in a mixing bowl. Let stand for 5-10 minutes until foamy.
  2. Add the remaining sugar, salt, melted butter, and eggs to the yeast mixture. Gradually add flour, mixing until a soft dough forms.
  3. Knead the dough on a lightly floured surface or in a stand mixer for 6-8 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, turning to coat. Cover and let rise in a warm place for 1-1.5 hours, or until doubled in size.
  5. While the dough rises, mix together the softened butter, brown sugar, and cinnamon in a bowl until well combined.
  6. Punch down the dough and roll it out on a lightly floured surface into a 12x18 inch rectangle.
  7. Spread the softened butter mixture evenly over the dough.
  8. Starting from the long edge, tightly roll up the dough into a log.
  9. Cut the log into 12 equal slices (about 1.5 inches thick).
  10. Arrange the rolls in a greased 9x13 inch baking pan. Cover and let rise for 30-45 minutes, or until puffy.
  11. Preheat oven to 350°F (175°C). Bake for 25-30 minutes, or until golden brown. Check for doneness using a toothpick in the centre roll. It should come out clean.
  12. While the rolls bake, beat together the softened cream cheese and butter until smooth. Add the powdered sugar and vanilla extract and beat until creamy. Add milk, if needed, to achieve desired consistency.
  13. Let the rolls cool slightly before frosting generously.
  14. Enjoy warm!
