Ingredients:
- 1 cup (237 ml) warm milk (105-115°F / 40-46°C)
- 2 ¼ teaspoons (7 g) active dry yeast
- 1/2 cup (100 g) granulated sugar
- 1/2 teaspoon (3 g) salt
- 1/4 cup (56 g) unsalted butter, softened
- 2 large eggs
- 3 cups (360 g) all-purpose flour, plus more for dusting
- 1/2 cup (100 g) granulated sugar
- 2 tablespoons (16 g) all-purpose flour
- 2 tablespoons (15 g) ground cinnamon
- 1/4 cup (56 g) unsalted butter, melted
- 1/2 cup (60 g) all-purpose flour
- 1/4 cup (50 g) packed light brown sugar
- 1/4 teaspoon (1.5 g) ground cinnamon
- 1/4 cup (56 g) cold unsalted butter, cut into small cubes
- 1 cup (120 g) powdered sugar
- 2-3 tablespoons (30-45 ml) milk
- 1/2 teaspoon (2.5 ml) vanilla extract
Instructions:
- Warm milk, add yeast and a pinch of sugar. Let stand until foamy (5-10 minutes).
- In a large bowl, combine the yeast mixture (if using), sugar, salt, softened butter, and eggs. Gradually add flour, mixing until a shaggy dough forms.
- Knead on a lightly floured surface until smooth and elastic (about 5-7 minutes). Or, use a stand mixer with a dough hook.
- Place the dough in a lightly greased bowl, turning to coat. Cover and let rise in a warm place until doubled in size (about 1 hour).
- In a medium bowl, combine sugar, flour, and cinnamon. Set aside. Melt butter and allow to cool slightly.
- In a small bowl, combine flour, brown sugar, and cinnamon. Cut in cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
- Punch down the dough (if risen). Roll it out into a large rectangle on a lightly floured surface. Brush with melted butter. Sprinkle evenly with cinnamon sugar mixture.
- Roll the dough up tightly into a log. Cut the log into 12 equal slices.
- Arrange the slices in a greased 9x13 inch baking pan.
- Cover and let rise in a warm place for 30 minutes.
- Preheat oven to 350°F (175°C).
- Sprinkle crumb topping evenly over the cake. Bake for 35-40 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
- Let cool slightly in the pan before drizzling with glaze (if using). To make the glaze, whisk together powdered sugar, milk, and vanilla extract until smooth.
