Ingredients:

  • 1 cup (237 ml) warm milk (105-115°F / 40-46°C)
  • 2 ¼ teaspoons (7 g) active dry yeast
  • 1/2 cup (100 g) granulated sugar
  • 1/2 teaspoon (3 g) salt
  • 1/4 cup (56 g) unsalted butter, softened
  • 2 large eggs
  • 3 cups (360 g) all-purpose flour, plus more for dusting
  • 1/2 cup (100 g) granulated sugar
  • 2 tablespoons (16 g) all-purpose flour
  • 2 tablespoons (15 g) ground cinnamon
  • 1/4 cup (56 g) unsalted butter, melted
  • 1/2 cup (60 g) all-purpose flour
  • 1/4 cup (50 g) packed light brown sugar
  • 1/4 teaspoon (1.5 g) ground cinnamon
  • 1/4 cup (56 g) cold unsalted butter, cut into small cubes
  • 1 cup (120 g) powdered sugar
  • 2-3 tablespoons (30-45 ml) milk
  • 1/2 teaspoon (2.5 ml) vanilla extract

Instructions:

  1. Warm milk, add yeast and a pinch of sugar. Let stand until foamy (5-10 minutes).
  2. In a large bowl, combine the yeast mixture (if using), sugar, salt, softened butter, and eggs. Gradually add flour, mixing until a shaggy dough forms.
  3. Knead on a lightly floured surface until smooth and elastic (about 5-7 minutes). Or, use a stand mixer with a dough hook.
  4. Place the dough in a lightly greased bowl, turning to coat. Cover and let rise in a warm place until doubled in size (about 1 hour).
  5. In a medium bowl, combine sugar, flour, and cinnamon. Set aside. Melt butter and allow to cool slightly.
  6. In a small bowl, combine flour, brown sugar, and cinnamon. Cut in cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  7. Punch down the dough (if risen). Roll it out into a large rectangle on a lightly floured surface. Brush with melted butter. Sprinkle evenly with cinnamon sugar mixture.
  8. Roll the dough up tightly into a log. Cut the log into 12 equal slices.
  9. Arrange the slices in a greased 9x13 inch baking pan.
  10. Cover and let rise in a warm place for 30 minutes.
  11. Preheat oven to 350°F (175°C).
  12. Sprinkle crumb topping evenly over the cake. Bake for 35-40 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
  13. Let cool slightly in the pan before drizzling with glaze (if using). To make the glaze, whisk together powdered sugar, milk, and vanilla extract until smooth.
