Ingredients:

  • 8 ounces sharp cheddar cheese, freshly grated
  • 4 ounces mild cheddar cheese, freshly grated
  • 4 ounces cream cheese, softened
  • 4 ounces jarred pimentos, drained and finely diced
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon black pepper
  • Pinch of salt

Instructions:

  1. Grate the Cheeses: Using a box grater, grate both the sharp and mild cheddar cheeses.
  2. Dice the Pimentos: Drain the pimentos well and finely dice them.
  3. Combine Ingredients: In a large mixing bowl, combine the grated cheeses, softened cream cheese, and diced pimentos.
  4. Add Flavor: Add the mayonnaise, Dijon mustard, garlic powder, cayenne pepper, black pepper, and salt to the cheese mixture.
  5. Mix Well: Use a rubber spatula to mix all ingredients together until well combined and creamy. Don't overmix!
  6. Taste and Adjust: Taste the pimento cheese and adjust seasoning as needed. Add more cayenne for extra heat, or a pinch more salt if desired.
  7. Chill (Optional): For best flavor, cover the pimento cheese and refrigerate for at least 30 minutes to allow the flavors to meld. (This step is completely optional, but it does make a difference!)
  8. Serve and Enjoy: Serve with crackers, celery sticks, sandwiches, or however you like!
