Ingredients:

  • 1 cup (125g) All-Purpose Flour, plus more if needed
  • 2 teaspoons Baking Powder
  • 1/4 teaspoon Baking Soda
  • 1/4 teaspoon Salt
  • 1 tablespoon Granulated Sugar
  • 1 large Egg, lightly beaten
  • 1 cup (240ml) Plain Greek Yogurt, non-fat or low-fat
  • 1/2 cup (120ml) Milk (any kind will do, even almond!)
  • 2 tablespoons Unsalted Butter, melted, plus more for greasing the pan

Instructions:

  1. Whisk together flour, baking powder, baking soda, salt, and sugar in a large bowl.
  2. In a separate bowl, whisk together the egg, Greek yogurt, milk, and melted butter.
  3. Gently pour the wet ingredients into the dry ingredients. Stir until just combined. Don't overmix! A few lumps are okay.
  4. Lightly grease a griddle or non-stick frying pan with butter over medium heat. The pan is ready when a drop of water sizzles and dances on the surface.
  5. Pour 1/4 cup of batter onto the hot griddle for each pancake.
  6. Cook for 2-3 minutes per side, or until golden brown and cooked through. Flip when bubbles begin to form on the surface.
  7. Serve immediately with your favourite toppings.
