Ingredients:
- 1 cup (125g) All-Purpose Flour, plus more if needed
- 2 teaspoons Baking Powder
- 1/4 teaspoon Baking Soda
- 1/4 teaspoon Salt
- 1 tablespoon Granulated Sugar
- 1 large Egg, lightly beaten
- 1 cup (240ml) Plain Greek Yogurt, non-fat or low-fat
- 1/2 cup (120ml) Milk (any kind will do, even almond!)
- 2 tablespoons Unsalted Butter, melted, plus more for greasing the pan
Instructions:
- Whisk together flour, baking powder, baking soda, salt, and sugar in a large bowl.
- In a separate bowl, whisk together the egg, Greek yogurt, milk, and melted butter.
- Gently pour the wet ingredients into the dry ingredients. Stir until just combined. Don't overmix! A few lumps are okay.
- Lightly grease a griddle or non-stick frying pan with butter over medium heat. The pan is ready when a drop of water sizzles and dances on the surface.
- Pour 1/4 cup of batter onto the hot griddle for each pancake.
- Cook for 2-3 minutes per side, or until golden brown and cooked through. Flip when bubbles begin to form on the surface.
- Serve immediately with your favourite toppings.
