Instructions:
- In a bowl, mix buttermilk, olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper.
- Add chicken cubes; cover and refrigerate for 30 minutes.
- In another bowl, combine flour, breadcrumbs, garlic powder, paprika, salt, and pepper.
- Remove marinated chicken from the fridge.
- Dredge chicken pieces in flour mixture, shaking off excess.
- Preheat grill or grill pan over medium-high heat; oil lightly.
- Place breaded chicken on the grill; cook for 5-7 minutes per side or until golden brown and the internal temperature reaches 165°F (74°C).
- Remove nuggets from the grill, let rest briefly, and serve hot.
