Ingredients:

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized cubes
  • 1/4 cup buttermilk
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup all-purpose flour
  • 1/2 cup breadcrumbs (panko for extra crunch)
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions:

  1. In a bowl, mix buttermilk, olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Add chicken cubes; cover and refrigerate for 30 minutes.
  3. In another bowl, combine flour, breadcrumbs, garlic powder, paprika, salt, and pepper.
  4. Remove marinated chicken from the fridge.
  5. Dredge chicken pieces in flour mixture, shaking off excess.
  6. Preheat grill or grill pan over medium-high heat; oil lightly.
  7. Place breaded chicken on the grill; cook for 5-7 minutes per side or until golden brown and the internal temperature reaches 165°F (74°C).
  8. Remove nuggets from the grill, let rest briefly, and serve hot.
