Ingredients:

  • 1/4 cup (60 ml) olive oil
  • 2 tablespoons (30 ml) red wine vinegar
  • 2 tablespoons (30 g) honey
  • 3 tablespoons (24 g) red pepper flakes (adjust to taste)
  • 3 cloves garlic, minced
  • Zest of 1 lemon
  • Juice of 1 lemon
  • Salt and pepper, to taste
  • 4 boneless, skinless chicken breasts (approximately 1.5 lbs or 680 g)

Instructions:

  1. In a mixing bowl, combine olive oil, red wine vinegar, honey, red pepper flakes, minced garlic, lemon zest, lemon juice, salt, and pepper. Whisk until well blended.
  2. Place chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over chicken
  3. Preheat the grill to medium-high heat (about 375°F to 450°F or 190°C to 232°C).
  4. Remove chicken from the marinade, discarding the marinade. Place chicken on the grill. Grill for 6-8 minutes per side, or until the internal temperature reaches 165°F (74°C) and the chicken has nice grill marks.
  5. Remove chicken from the grill and let it rest for 5 minutes before slicing. Serve as desired.
