Ingredients:

  • 1/4 cup (60 ml) olive oil
  • 3 tablespoons (45 ml) lime juice (about 2 limes)
  • 2 tablespoons (30 g) honey
  • 1 tablespoon (15 g) chili powder
  • 1 teaspoon (5 g) smoked paprika
  • 1 teaspoon (5 g) ground cumin
  • 1/2 teaspoon (2.5 g) cayenne pepper (adjust to taste)
  • 3 cloves garlic, minced
  • Salt and black pepper, to taste
  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 680 g)

Instructions:

  1. In a mixing bowl, combine olive oil, lime juice, honey, chili powder, smoked paprika, cumin, cayenne pepper, minced garlic, and a pinch of salt and black pepper. Whisk until well blended.
  2. Place chicken breasts in a plastic bag or shallow dish. Pour the marinade over the chicken
  3. Preheat your grill to medium-high heat (about 400°F / 200°C).
  4. Remove chicken from marinade, allowing excess marinade to drip off. Grill chicken for 7-10 minutes per side, or until the internal temperature reaches 165°F (75°C). Look for nice grill marks and a firm texture.
  5. Remove from the grill and let the chicken rest for 5 minutes before slicing. Serve with your choice of sides.
