Ingredients:

  • 1/4 cup (60ml) olive oil
  • Juice of 2 large lemons (about 1/2 cup or 120ml)
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)
  • 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 boneless, skinless chicken breasts (about 1.5 pounds or 680 grams)

Instructions:

  1. In a mixing bowl, whisk together olive oil, lemon juice, minced garlic, rosemary, thyme, salt, and pepper.
  2. Place chicken breasts in a resealable plastic bag or shallow dish. Pour marinade over the chicken, ensuring all pieces are coated. Seal or cover and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.
  3. Heat the grill to medium-high heat (about 400°F/200°C).
  4. Remove chicken from the marinade, letting excess drip off. Place on the grill and cook for 6-7 minutes on each side or until internal temperature reaches 165°F (75°C).
  5. Once cooked, remove from the grill. Let rest for 5 minutes before slicing or serving.
