Ingredients:

  • 4 Mahi Mahi fillets (6 oz / 170 g each)
  • 2 tablespoons olive oil (30 ml)
  • 1 teaspoon garlic powder (5 g)
  • 1 teaspoon paprika (5 g)
  • Salt and pepper to taste
  • 1 orange, diced
  • 1 grapefruit, diced
  • 1 lime, juiced
  • 1/2 red onion, finely chopped
  • 1 jalapeño, seeded and minced (optional)
  • 1/4 cup fresh cilantro, chopped (10 g)
  • Salt to taste

Instructions:

  1. In a bowl, combine olive oil, garlic powder, paprika, salt, and pepper. Coat Mahi Mahi fillets with the marinade and let them sit for 10 minutes.
  2. In a mixing bowl, combine diced orange, grapefruit, lime juice, chopped red onion, jalapeño (if using), cilantro, and salt. Stir gently to combine. Set aside to let the flavors meld.
  3. Preheat the grill to medium-high heat (about 375°F / 190°C).
  4. Place fillets skin-side down on the grill. Grill for 4-6 minutes, then flip and grill for another 4-6 minutes, or until the internal temperature reaches 145°F (63°C) and the fish flakes easily.
  5. Plate the grilled Mahi Mahi and top with Citrus Salsa. Garnish with additional cilantro if desired.
