Ingredients:

  • 1 pound large shrimp, peeled and deveined (450g)
  • 2 tablespoons olive oil (30ml)
  • 1 tablespoon lime juice (15ml)
  • 1 teaspoon chili powder (5ml)
  • ½ teaspoon garlic powder (2.5ml)
  • ¼ teaspoon salt (1.25ml)
  • ⅛ teaspoon black pepper (.6ml)
  • 5 ounces mixed greens (140g)
  • 1 ripe mango, peeled and diced
  • ½ red bell pepper, thinly sliced
  • ¼ red onion, thinly sliced
  • ¼ cup chopped cilantro (optional)
  • 2 tablespoons olive oil (30ml)
  • 2 tablespoons lime juice (30ml)
  • 1 teaspoon honey or maple syrup (5ml)
  • ½ teaspoon chili flakes (2.5ml)

Instructions:

  1. In a medium bowl, combine the shrimp, olive oil, lime juice, chili powder, garlic powder, salt, and pepper. Toss to coat and let marinate for at least 15 minutes.
  2. While the shrimp marinates, combine the mixed greens, mango, red bell pepper, red onion, and cilantro (if using) in a large bowl.
  3. In a small bowl, whisk together the olive oil, lime juice, honey/maple syrup, chili flakes, salt, and pepper.
  4. Preheat your grill or grill pan to medium-high heat. Grill the shrimp for 2-3 minutes per side, or until pink and opaque.
  5. Arrange the salad greens on plates. Top with the grilled shrimp and drizzle with the chili-lime dressing.
