- 1 pound large shrimp, peeled and deveined (450g)
- 2 tablespoons olive oil (30ml)
- 1 tablespoon lime juice (15ml)
- 1 teaspoon chili powder (5ml)
- ½ teaspoon garlic powder (2.5ml)
- ¼ teaspoon salt (1.25ml)
- ⅛ teaspoon black pepper (.6ml)
- 5 ounces mixed greens (140g)
- 1 ripe mango, peeled and diced
- ½ red bell pepper, thinly sliced
- ¼ red onion, thinly sliced
- ¼ cup chopped cilantro (optional)
- 2 tablespoons olive oil (30ml)
- 2 tablespoons lime juice (30ml)
- 1 teaspoon honey or maple syrup (5ml)
- ½ teaspoon chili flakes (2.5ml)
Instructions:
- In a medium bowl, combine the shrimp, olive oil, lime juice, chili powder, garlic powder, salt, and pepper. Toss to coat and let marinate for at least 15 minutes.
- While the shrimp marinates, combine the mixed greens, mango, red bell pepper, red onion, and cilantro (if using) in a large bowl.
- In a small bowl, whisk together the olive oil, lime juice, honey/maple syrup, chili flakes, salt, and pepper.
