Ingredients:

  • 2 medium zucchinis, sliced into 1-inch chunks (300g)
  • 2 medium yellow squash, sliced into 1-inch chunks (300g)
  • 2 red bell peppers, cut into 1-inch pieces (300g)
  • 1 large red onion, cut into 1-inch wedges (150g)
  • 8 oz whole button mushrooms (225g)
  • 1 cup cherry tomatoes (150g)
  • 1/4 cup extra virgin olive oil (60ml)
  • 2 tbsp fresh lemon juice (30ml)
  • 3 cloves garlic, minced (15g)
  • 1 tsp dried oregano (2g)
  • 1/2 tsp sea salt (3g)
  • 1/4 tsp cracked black pepper (1g)

Instructions:

  1. Wash all vegetables thoroughly. Slice the zucchini, squash, and peppers into uniform 1-inch chunks. Cut the red onion into thick wedges. Place all vegetables into a large mixing bowl.
  2. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
  3. Pour the marinade over the vegetables and toss gently until coated. Let the vegetables marinate at room temperature for 30 minutes.
  4. Preheat the grill to medium-high heat (approximately 400°F/200°C) and lightly oil the grates.
  5. Thread the marinated vegetables onto skewers, pressing them firmly together to minimize gaps.
  6. Grill for 10-12 minutes, turning every 3-4 minutes, until the edges are charred and the vegetables are tender-crisp.
