Ingredients:

  • 4 large ripe tomatoes (approx. 1.5 lbs / 680g)
  • 1 medium red onion, diced (approx. 1 cup / 150g)
  • 1-2 jalapeños, seeded and minced (adjust to taste)
  • 1/2 cup (15g) fresh cilantro, chopped
  • 2 tablespoons (30ml) olive oil
  • Juice of 1 lime (approx. 2 tablespoons / 30ml)
  • Salt, to taste
  • Pepper, to taste

Instructions:

  1. Prepare the Grill: Preheat the grill to medium-high heat.
  2. Grill the Tomatoes: Slice tomatoes in half, brush with olive oil, and place cut-side down on the grill. Grill for 5-7 minutes until skin is charred and tomatoes are softened.
  3. Mix the Ingredients: In a large mixing bowl, combine the grilled tomatoes (chopped), red onion, jalapeños, and cilantro. Squeeze fresh lime juice over the mixture.
  4. Season the Salsa: Add salt and pepper to taste; adjust flavors as needed.
  5. Chill and Serve: Allow salsa to chill in the refrigerator for 30 minutes to let flavors meld. Serve in a bowl and enjoy with chips or as a topping.
