Ingredients:
- 4 large ripe tomatoes (approx. 1.5 lbs / 680g)
- 1 medium red onion, diced (approx. 1 cup / 150g)
- 1-2 jalapeños, seeded and minced (adjust to taste)
- 1/2 cup (15g) fresh cilantro, chopped
- 2 tablespoons (30ml) olive oil
- Juice of 1 lime (approx. 2 tablespoons / 30ml)
- Salt, to taste
- Pepper, to taste
Instructions:
- Prepare the Grill: Preheat the grill to medium-high heat.
- Grill the Tomatoes: Slice tomatoes in half, brush with olive oil, and place cut-side down on the grill. Grill for 5-7 minutes until skin is charred and tomatoes are softened.
- Mix the Ingredients: In a large mixing bowl, combine the grilled tomatoes (chopped), red onion, jalapeños, and cilantro. Squeeze fresh lime juice over the mixture.
- Season the Salsa: Add salt and pepper to taste; adjust flavors as needed.
- Chill and Serve: Allow salsa to chill in the refrigerator for 30 minutes to let flavors meld. Serve in a bowl and enjoy with chips or as a topping.
