Ingredients:
- 4 (6-ounce) Wahoo fillets (170 g each)
- 2 tablespoons olive oil (30 mL)
- 1 teaspoon garlic powder (5 g)
- 1 teaspoon smoked paprika (5 g)
- Salt and pepper to taste
- 1 large ripe mango, diced (about 1 cup, 150 g)
- 1/2 red onion, finely chopped (75 g)
- 1 jalapeño, finely chopped (optional)
- 1/4 cup fresh cilantro, chopped (5 g)
- Juice of 1 lime (about 2 tablespoons, 30 mL)
- Salt to taste
Instructions:
- In a bowl, combine olive oil, garlic powder, smoked paprika, salt, and pepper. Coat Wahoo fillets with the marinade and let sit for 30 minutes.
- In a separate bowl, combine diced mango, red onion, jalapeño (if using), cilantro, lime juice, and salt. Mix gently and set aside.
- Preheat the grill to medium-high heat (about 375°F to 450°F / 190°C to 232°C).
- Place the marinated Wahoo fillets on the grill. Grill for about 4-5 minutes on each side, or until the internal temperature reaches 145°F (63°C) and fish flakes easily with a fork.
- Remove Wahoo from grill and let rest for a couple of minutes. Serve each fillet topped with a generous spoonful of fresh mango salsa.
