Ingredients:
- 1 small seedless watermelon (about 8-10 pounds/3.6-4.5 kg), cut into 1-inch (2.5cm) thick rounds
- 2 tablespoons olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup balsamic vinegar
- 1 tablespoon honey or maple syrup
- 2 tablespoons fresh mint, finely chopped
- Optional: Feta cheese, crumbled
Instructions:
- Cut the watermelon into 1-inch thick rounds. Then cut each round into 4 steak shaped pieces. Pat the watermelon steaks dry with paper towels.
- Brush both sides of the watermelon steaks with olive oil, then sprinkle with salt and pepper.
- Preheat the grill to medium-high heat (about 375°F/190°C). Make sure the grill grates are clean.
- Place the watermelon steaks on the grill and cook for 2-4 minutes per side, until grill marks appear and the watermelon is slightly softened but still holds its shape. Watch closely to prevent burning!
- While the watermelon is grilling, combine balsamic vinegar and honey (or maple syrup) in a small saucepan. Bring to a simmer over medium heat and cook for 5-7 minutes, or until the glaze has thickened slightly.
- Remove the grilled watermelon from the grill and brush with the balsamic glaze. Sprinkle with fresh mint and, if desired, crumbled feta cheese. Serve immediately.
