Ingredients:

  • 1 small seedless watermelon (about 8-10 pounds/3.6-4.5 kg), cut into 1-inch (2.5cm) thick rounds
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup balsamic vinegar
  • 1 tablespoon honey or maple syrup
  • 2 tablespoons fresh mint, finely chopped
  • Optional: Feta cheese, crumbled

Instructions:

  1. Cut the watermelon into 1-inch thick rounds. Then cut each round into 4 steak shaped pieces. Pat the watermelon steaks dry with paper towels.
  2. Brush both sides of the watermelon steaks with olive oil, then sprinkle with salt and pepper.
  3. Preheat the grill to medium-high heat (about 375°F/190°C). Make sure the grill grates are clean.
  4. Place the watermelon steaks on the grill and cook for 2-4 minutes per side, until grill marks appear and the watermelon is slightly softened but still holds its shape. Watch closely to prevent burning!
  5. While the watermelon is grilling, combine balsamic vinegar and honey (or maple syrup) in a small saucepan. Bring to a simmer over medium heat and cook for 5-7 minutes, or until the glaze has thickened slightly.
  6. Remove the grilled watermelon from the grill and brush with the balsamic glaze. Sprinkle with fresh mint and, if desired, crumbled feta cheese. Serve immediately.
