Ingredients:
- 3 ripe bananas, mashed (about 1 ½ cups)
- 1/3 cup (75g) unsalted butter, melted
- 3/4 cup (150g) granulated sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- Pinch of salt
- 1 ½ cups (190g) all-purpose flour
- 1 teaspoon ground cinnamon (optional)
- 1/2 cup (75g) chopped walnuts or pecans (optional)
- 1/2 cup (90g) chocolate chips (optional)
Instructions:
- Preheat the oven to 350°F (175°C).
- Prepare the loaf pan by greasing it with butter or lining it with parchment paper.
- Mash the bananas in a mixing bowl with a fork until smooth.
- Stir in melted butter, sugar, beaten egg, and vanilla extract until mixed.
- In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
- Gradually add the dry mix to the wet mix, stirring just until combined.
- Fold in optional mix-ins like nuts or chocolate chips if desired.
- Pour the batter into the prepared loaf pan.
- Bake for 55-60 minutes or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes, then remove and transfer to a wire rack to cool completely before slicing.
