Ingredients:

  • 3 ripe bananas, mashed (about 1 ½ cups)
  • 1/3 cup (75g) unsalted butter, melted
  • 3/4 cup (150g) granulated sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 ½ cups (190g) all-purpose flour
  • 1 teaspoon ground cinnamon (optional)
  • 1/2 cup (75g) chopped walnuts or pecans (optional)
  • 1/2 cup (90g) chocolate chips (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the loaf pan by greasing it with butter or lining it with parchment paper.
  3. Mash the bananas in a mixing bowl with a fork until smooth.
  4. Stir in melted butter, sugar, beaten egg, and vanilla extract until mixed.
  5. In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
  6. Gradually add the dry mix to the wet mix, stirring just until combined.
  7. Fold in optional mix-ins like nuts or chocolate chips if desired.
  8. Pour the batter into the prepared loaf pan.
  9. Bake for 55-60 minutes or until a toothpick inserted in the center comes out clean.
  10. Cool in the pan for 10 minutes, then remove and transfer to a wire rack to cool completely before slicing.
