Ingredients:

  • 1 cup (120g) all-purpose flour
  • 2 tablespoons (25g) granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1 large egg
  • 1 cup (240ml) milk (whole or any preferred plant-based milk)
  • 2 ripe bananas, mashed
  • 2 tablespoons (30g) unsalted butter, melted (plus extra for cooking)

Instructions:

  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, whisk the egg, milk, and melted butter until well combined. Add in the mashed bananas and mix until smooth.
  3. Pour the wet ingredients into the dry ingredients. Stir gently until just combined—don’t over-mix; a few lumps are fine!
  4. Preheat a non-stick skillet or griddle over medium heat and add a small amount of butter to coat the surface.
  5. Pour approximately ¼ cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface (about 2-3 minutes), then flip.
  6. Cook for another 2-3 minutes on the other side until golden brown. Remove and keep warm. Repeat with remaining batter.
  7. Serve the pancakes warm with your choice of toppings (maple syrup, fruits, or nuts).
