Ingredients:
- 1 cup (120g) all-purpose flour
- 2 tablespoons (25g) granulated sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ¼ teaspoon salt
- 1 large egg
- 1 cup (240ml) milk (whole or any preferred plant-based milk)
- 2 ripe bananas, mashed
- 2 tablespoons (30g) unsalted butter, melted (plus extra for cooking)
Instructions:
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk the egg, milk, and melted butter until well combined. Add in the mashed bananas and mix until smooth.
- Pour the wet ingredients into the dry ingredients. Stir gently until just combined—don’t over-mix; a few lumps are fine!
- Preheat a non-stick skillet or griddle over medium heat and add a small amount of butter to coat the surface.
- Pour approximately ¼ cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface (about 2-3 minutes), then flip.
- Cook for another 2-3 minutes on the other side until golden brown. Remove and keep warm. Repeat with remaining batter.
- Serve the pancakes warm with your choice of toppings (maple syrup, fruits, or nuts).
