Ingredients:

  • 1.5 lb mixed heirloom tomatoes
  • 1 small red onion
  • 1 cup fresh basil leaves
  • 8 oz Burrata or fresh Mozzarella pearls
  • 3 tbsp extra-virgin olive oil
  • 1 tbsp balsamic vinegar or red wine vinegar
  • 1 clove garlic
  • 1/2 tsp flaky sea salt
  • 1/4 tsp freshly cracked black pepper

Instructions:

  1. Slice the heirloom tomatoes into thick, irregular wedges and arrange them in a layered pattern on a platter, alternating colors. Scatter thinly sliced red onions throughout the tomatoes.
  2. In a small bowl or jar, combine the olive oil, vinegar, minced garlic, salt, and pepper. Whisk vigorously or shake until the mixture is emulsified and thickened.
  3. Place the Burrata ball in the center of the platter (or scatter mozzarella pearls). Drizzle the dressing evenly over the tomatoes and cheese.
  4. Tear fresh basil leaves by hand over the top and finish with a final pinch of flaky salt over the cheese.
