Ingredients:
- 1.5 lb mixed heirloom tomatoes
- 1 small red onion
- 1 cup fresh basil leaves
- 8 oz Burrata or fresh Mozzarella pearls
- 3 tbsp extra-virgin olive oil
- 1 tbsp balsamic vinegar or red wine vinegar
- 1 clove garlic
- 1/2 tsp flaky sea salt
- 1/4 tsp freshly cracked black pepper
Instructions:
- Slice the heirloom tomatoes into thick, irregular wedges and arrange them in a layered pattern on a platter, alternating colors. Scatter thinly sliced red onions throughout the tomatoes.
- In a small bowl or jar, combine the olive oil, vinegar, minced garlic, salt, and pepper. Whisk vigorously or shake until the mixture is emulsified and thickened.
- Place the Burrata ball in the center of the platter (or scatter mozzarella pearls). Drizzle the dressing evenly over the tomatoes and cheese.
- Tear fresh basil leaves by hand over the top and finish with a final pinch of flaky salt over the cheese.
