Ingredients:

  • 4 tablespoons black or white organic chia seeds
  • 1 cup unsweetened coconut milk
  • 1 tablespoon pure maple syrup
  • 0.5 teaspoon pure vanilla extract
  • 1 pinch sea salt
  • 0.25 cup Plain Greek yogurt
  • 1 scoop vanilla protein powder

Instructions:

  1. In a 16 oz mason jar or glass bowl, combine the chia seeds, coconut milk, maple syrup, vanilla extract, sea salt, Greek yogurt, and protein powder.
  2. Whisk vigorously for 30 seconds until the seeds are evenly distributed and not settling at the bottom.
  3. Let the mixture sit for 5 minutes at room temperature to allow the outer shells of the seeds to begin softening.
  4. Whisk or shake the jar again for another 30 seconds to break up any clumps and ensure a smooth consistency.
  5. Seal the container and refrigerate for at least 2 hours, or ideally overnight, to allow the pudding to fully set into a thick, spoonable texture.
