Ingredients:
- 9 cups Rice Chex or Corn Chex cereal
- 1 ½ cups Powdered Sugar (Icing Sugar), plus extra for dusting
- 6 Tbsp Unsalted Butter
- 1 cup Semi-sweet Chocolate Chips
- ½ cup Smooth Peanut Butter (standard processed variety)
- 1 tsp Vanilla Extract
- A pinch of Sea Salt (optional)
- 1 cup Holiday M&Ms (Red, Green, and White)
- 1 cup Mini Pretzel Twists
- ¼ cup Festive Sprinkles
Instructions:
- Place the Chex cereal gently into a large mixing bowl. Measure the powdered sugar into one of the large resealable plastic bags and set it aside.
- Combine the butter, chocolate chips, and peanut butter in a microwave-safe bowl.
- Microwave on medium power (50-70%) in 30-second intervals, stirring thoroughly after each interval, until the mixture is completely smooth (approximately 60–90 seconds).
- Stir in the vanilla extract and salt (if using) until fully incorporated and the mixture is glossy.
- Pour the chocolate mixture immediately over the measured Chex cereal in the large mixing bowl. Using a rubber spatula, carefully fold and stir the cereal until it is evenly coated. Work quickly and gently to avoid crushing the delicate flakes.
- Divide the coated cereal equally between the two large resealable bags containing the powdered sugar.
- Seal the bags, ensuring there is plenty of air inside. Gently shake and toss the bag until the cereal is thoroughly coated in powdered sugar (about 2–3 minutes of gentle shaking per bag).
- Pour the coated cereal onto a prepared baking sheet in a single layer. Allow it to cool and set completely for 15–20 minutes until dry to the touch.
- Once set, return the mixture to the large bowl. Gently toss with the holiday M&Ms, mini pretzels, and festive sprinkles.
- Store the finished Holiday Reindeer Chow in an airtight container at room temperature.
