Ingredients:

  • 2 cups heavy whipping cream (at least 36% milkfat)
  • 2 tbsp cultured buttermilk (containing live active cultures)

Instructions:

  1. Wash a glass jar with hot, soapy water and dry it completely.
  2. Pour 2 cups heavy whipping cream into the jar.
  3. Add 2 tbsp cultured buttermilk to the cream.
  4. Use a clean spoon to whisk the two together until completely combined and smooth.
  5. Place a coffee filter or cheesecloth over the jar and secure it with a rubber band.
  6. Place the jar on your counter, away from direct sunlight, until it reaches a cozy ambient temperature.
  7. Let the jar sit undisturbed for 24 hours. Note: The mixture should look thick and slightly jiggly like custard.
  8. Remove the cloth and screw on a solid lid.
  9. Place the jar in the fridge for at least 6 hours until the cream is firm and cold.
  10. Before serving, stir gently to achieve a velvety, uniform texture.
