Ingredients:

  • 1 large red bell pepper, cut into 1-inch pieces
  • 1 medium red onion, cut into 1-inch chunks
  • 2 tbsp vegetable oil
  • 1/3 cup honey
  • 1/4 cup soy sauce
  • 3 cloves garlic, minced
  • 1 tbsp rice vinegar
  • 1/2 tsp ground black pepper
  • 1/4 tsp red pepper flakes

Instructions:

  1. Combine the honey, soy sauce, minced garlic, rice vinegar, and pepper in a bowl and whisk until the mixture is a glossy, homogenous emulsion.
  2. Toss the chicken cubes in the marinade, ensuring every piece is fully coated, and refrigerate for at least 30 minutes.
  3. Thread the marinated chicken, red pepper, and red onion onto skewers in an alternating pattern, leaving small gaps between pieces to ensure proper charring.
  4. Preheat grill to medium-high and brush grates with oil.
  5. Grill for 5-6 minutes per side until the edges are mahogany-colored and the internal temperature reaches 165°F (74°C).
