- 1/4 cup soy sauce
- 3 cloves garlic, minced
- 1 tbsp rice vinegar
- 1/2 tsp ground black pepper
- 1/4 tsp red pepper flakes
Instructions:
- Combine the honey, soy sauce, minced garlic, rice vinegar, and pepper in a bowl and whisk until the mixture is a glossy, homogenous emulsion.
- Toss the chicken cubes in the marinade, ensuring every piece is fully coated, and refrigerate for at least 30 minutes.
- Thread the marinated chicken, red pepper, and red onion onto skewers in an alternating pattern, leaving small gaps between pieces to ensure proper charring.
- Preheat grill to medium-high and brush grates with oil.
- Grill for 5-6 minutes per side until the edges are mahogany-colored and the internal temperature reaches 165°F (74°C).
