Ingredients:

  • 1 medium rutabaga, peeled and cubed (about 1 pound / 450 grams)
  • 3 medium carrots, peeled and sliced (about 1 pound / 450 grams)
  • 2 tablespoons unsalted butter (30 grams)
  • 2 tablespoons honey (30 ml)
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried)
  • Salt and pepper, to taste

Instructions:

  1. Peel and cube the rutabaga and slice the carrots.
  2. Fill a large pot with water, add a pinch of salt, and bring to a boil.
  3. Add the rutabaga and carrots, cook for 10-15 minutes until just tender.
  4. Drain in a colander.
  5. In a large skillet, melt the butter over medium heat.
  6. Add the boiled rutabaga and carrots to the skillet.
  7. Pour in the honey and sprinkle with thyme, salt, and pepper.
  8. Stir gently to combine everything. Cook for 5-10 minutes, turning occasionally, until the veggies are caramelized and coated in glaze.
  9. Transfer to a serving dish and serve warm.
