Ingredients:
- 1 medium rutabaga, peeled and cubed (about 1 pound / 450 grams)
- 3 medium carrots, peeled and sliced (about 1 pound / 450 grams)
- 2 tablespoons unsalted butter (30 grams)
- 2 tablespoons honey (30 ml)
- 1 tablespoon fresh thyme leaves (or 1 teaspoon dried)
- Salt and pepper, to taste
Instructions:
- Peel and cube the rutabaga and slice the carrots.
- Fill a large pot with water, add a pinch of salt, and bring to a boil.
- Add the rutabaga and carrots, cook for 10-15 minutes until just tender.
- Drain in a colander.
- In a large skillet, melt the butter over medium heat.
- Add the boiled rutabaga and carrots to the skillet.
- Pour in the honey and sprinkle with thyme, salt, and pepper.
- Stir gently to combine everything. Cook for 5-10 minutes, turning occasionally, until the veggies are caramelized and coated in glaze.
- Transfer to a serving dish and serve warm.
