Ingredients:
- 1/4 cup (85g) Honey
- 2 tbsp (30ml) Freshly squeezed lime juice
- 1 tsp (2g) Fresh lime zest
- 1/2 tsp (1g) Poppy seeds
- 1 lb (450g) Fresh strawberries, hulled and quartered
- 1 lb (450g) Fresh pineapple, cut into 1-inch chunks
- 12 oz (340g) Fresh blueberries
- 12 oz (340g) Red or green seedless grapes, halved
- 5 Kiwis, peeled and sliced into half-moons
- 3 Mandarin oranges, peeled and segmented
Instructions:
- In a small glass bowl, whisk together the honey, lime juice, lime zest, and poppy seeds until the mixture is a uniform, translucent syrup.
- Wash and process all fruit according to the ingredient list, ensuring clean cuts with a sharp chef's knife to prevent bruising.
- Place the sturdiest fruits, the pineapple chunks and halved grapes, into a large non-reactive glass mixing bowl to form a foundation.
- Add the strawberries, blueberries, and mandarin orange segments to the bowl.
- Drizzle the honey-lime glaze over the fruit and use a silicone spatula to gently fold the mixture until every piece is evenly coated.
- Add the delicate kiwi slices last, folding once more very gently to avoid crushing the cell walls.
