Ingredients:

  • 1/4 cup (85g) Honey
  • 2 tbsp (30ml) Freshly squeezed lime juice
  • 1 tsp (2g) Fresh lime zest
  • 1/2 tsp (1g) Poppy seeds
  • 1 lb (450g) Fresh strawberries, hulled and quartered
  • 1 lb (450g) Fresh pineapple, cut into 1-inch chunks
  • 12 oz (340g) Fresh blueberries
  • 12 oz (340g) Red or green seedless grapes, halved
  • 5 Kiwis, peeled and sliced into half-moons
  • 3 Mandarin oranges, peeled and segmented

Instructions:

  1. In a small glass bowl, whisk together the honey, lime juice, lime zest, and poppy seeds until the mixture is a uniform, translucent syrup.
  2. Wash and process all fruit according to the ingredient list, ensuring clean cuts with a sharp chef's knife to prevent bruising.
  3. Place the sturdiest fruits, the pineapple chunks and halved grapes, into a large non-reactive glass mixing bowl to form a foundation.
  4. Add the strawberries, blueberries, and mandarin orange segments to the bowl.
  5. Drizzle the honey-lime glaze over the fruit and use a silicone spatula to gently fold the mixture until every piece is evenly coated.
  6. Add the delicate kiwi slices last, folding once more very gently to avoid crushing the cell walls.
