Ingredients:

  • 4 medium yams (about 2 lbs / 900g), peeled and cut into 1-inch cubes
  • 2 tablespoons olive oil (30ml)
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons honey (30g)
  • 1 tablespoon Dijon mustard (15g)
  • 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme) (5g)

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Peel and cut the yams into even 1-inch cubes. Place in a mixing bowl.
  3. Drizzle with olive oil and season with salt and black pepper. Toss to coat evenly.
  4. In another small bowl, combine honey, Dijon mustard, and thyme. Mix well until thoroughly combined.
  5. Spread the yams onto a baking sheet in a single layer. Roast for 15 minutes, then remove from oven.
  6. Drizzle the honey-mustard mixture over the yams. Toss to coat and return to the oven.
  7. Roast for an additional 15 minutes or until caramelized and fork-tender.
  8. Remove from the oven, let cool slightly, and serve warm.
