Ingredients:
- 4 medium yams (about 2 lbs / 900g), peeled and cut into 1-inch cubes
- 2 tablespoons olive oil (30ml)
- Salt and freshly ground black pepper, to taste
- 2 tablespoons honey (30g)
- 1 tablespoon Dijon mustard (15g)
- 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme) (5g)
Instructions:
- Preheat the oven to 400°F (200°C).
- Peel and cut the yams into even 1-inch cubes. Place in a mixing bowl.
- Drizzle with olive oil and season with salt and black pepper. Toss to coat evenly.
- In another small bowl, combine honey, Dijon mustard, and thyme. Mix well until thoroughly combined.
- Spread the yams onto a baking sheet in a single layer. Roast for 15 minutes, then remove from oven.
- Drizzle the honey-mustard mixture over the yams. Toss to coat and return to the oven.
- Roast for an additional 15 minutes or until caramelized and fork-tender.
- Remove from the oven, let cool slightly, and serve warm.
