Ingredients:
- 2 lbs (900g) Japanese sweet potatoes (about 2-3 medium), scrubbed
- 2 tablespoons olive oil
- 1 tablespoon honey
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
- Optional: Pinch of cinnamon or nutmeg
Instructions:
- Preheat your oven to 400°F (200°C).
- Scrub sweet potatoes and dice into roughly 1-inch (2.5cm) cubes.
- In a large bowl, toss the cubed sweet potatoes with olive oil, honey, salt, and pepper (and cinnamon/nutmeg, if using). Ensure even coating.
- Spread the sweet potatoes in a single layer on the baking sheet. Don't overcrowd; use two sheets if necessary.
- Roast for 30-40 minutes, or until tender and slightly caramelized, flipping halfway through for even browning. Check for tenderness with a fork – it should easily pierce the potatoes.
- Remove from the oven and serve immediately.
