Ingredients:
- 2 (4-6 ounce) salmon fillets, skin on or off (113-170g)
- 1 tablespoon olive oil (15 ml)
- Salt and freshly ground black pepper to taste
- 2 tablespoons honey (30 ml)
- 2 tablespoons soy sauce (30 ml)
- 1 tablespoon rice vinegar (15 ml)
- 1 clove garlic, minced (about 1 teaspoon)
- 1/2 teaspoon ground ginger
- 1/4 teaspoon red pepper flakes (optional, for a touch of heat)
Instructions:
- In a small bowl, whisk together the honey, soy sauce, rice vinegar, minced garlic, ground ginger, and red pepper flakes (if using).
- Pat the salmon fillets dry with paper towels. Season both sides with salt and pepper.
- If using skin-on salmon, sear skin-side down in an oven-safe skillet with olive oil over medium-high heat for 2-3 minutes until crispy. This step isn't essential, but it does add extra flavour and texture.
- Place the salmon fillets on a baking sheet lined with parchment paper (or keep in the skillet). Brush generously with half of the honey glaze.
- Bake in a preheated oven at 400°F (200°C) for 10-12 minutes, or until the internal temperature reaches 145°F (63°C). The salmon should be flaky and opaque.
- Remove the salmon from the oven and brush with the remaining honey glaze.
- For a more caramelised glaze, broil for 1-2 minutes, watching carefully to prevent burning.
