Ingredients:

  • 2 (4-6 ounce) salmon fillets, skin on or off (113-170g)
  • 1 tablespoon olive oil (15 ml)
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons honey (30 ml)
  • 2 tablespoons soy sauce (30 ml)
  • 1 tablespoon rice vinegar (15 ml)
  • 1 clove garlic, minced (about 1 teaspoon)
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon red pepper flakes (optional, for a touch of heat)

Instructions:

  1. In a small bowl, whisk together the honey, soy sauce, rice vinegar, minced garlic, ground ginger, and red pepper flakes (if using).
  2. Pat the salmon fillets dry with paper towels. Season both sides with salt and pepper.
  3. If using skin-on salmon, sear skin-side down in an oven-safe skillet with olive oil over medium-high heat for 2-3 minutes until crispy. This step isn't essential, but it does add extra flavour and texture.
  4. Place the salmon fillets on a baking sheet lined with parchment paper (or keep in the skillet). Brush generously with half of the honey glaze.
  5. Bake in a preheated oven at 400°F (200°C) for 10-12 minutes, or until the internal temperature reaches 145°F (63°C). The salmon should be flaky and opaque.
  6. Remove the salmon from the oven and brush with the remaining honey glaze.
  7. For a more caramelised glaze, broil for 1-2 minutes, watching carefully to prevent burning.
