Ingredients:
- 1 cup extra-virgin olive oil
- 1 cup packed fresh herbs (e.g., basil, rosemary, thyme)
- 2-3 cloves garlic (optional, peeled and lightly crushed)
- 1 teaspoon red pepper flakes (optional, for heat)
Instructions:
- Wash and dry the herbs thoroughly. Peel and crush the garlic if using.
- Combine olive oil, herbs, garlic, and red pepper flakes in a clean bottle for cold infusion. Seal tightly and let steep in a cool, dark place for 1-2 weeks.
- For warm infusion, heat olive oil in a small saucepan over low heat. Add herbs, garlic, and red pepper flakes, and gently warm for 5 minutes without boiling. Remove from heat and let cool.
- Use a fine mesh strainer or cheesecloth to strain the herb-infused oil into a clean bottle, discarding the solids.
- Seal the bottle and store in a cool, dark place. Use within 2-4 weeks for optimal flavor.
