Ingredients:

  • 1 packet (approx. 85g/3 oz) instant noodles, crushed slightly
  • 2 tbsp (30 ml) cooked chicken or pork, shredded
  • 2 tbsp (30 ml) cooked shrimp, peeled and deveined
  • 1/4 cup (60 ml) firm tofu, cubed
  • 1 hard-boiled egg, sliced
  • 1/4 cup (60 ml) shredded carrots
  • 1/4 cup (60 ml) chopped green onions
  • 1/4 cup (60 ml) sliced mushrooms
  • 1/4 cup (60 ml) chopped spinach
  • 1/4 cup (60 ml) bean sprouts
  • 1/4 cup (60 ml) edamame
  • 1 tsp soy sauce
  • 1/2 tsp sesame oil
  • 1/4 tsp sriracha or chili garlic sauce
  • 1/4 tsp dried seaweed flakes (nori)
  • Package of seasoning included with the noodles
  • Boiling water

Instructions:

  1. Chop all vegetables and protein into bite-sized pieces.
  2. Start with the flavor boosters (soy sauce, sesame oil, spices). Then, add the protein. Follow with the denser vegetables (carrots, mushrooms). Next, layer in the noodles. Top with the more delicate veggies (green onions, spinach, bean sprouts).
  3. Tightly seal the jar. Store in the refrigerator for up to 3-4 days.
  4. When ready to eat, pour boiling water into the jar until it covers the noodles and ingredients. Be careful to not overfill.
  5. Cover the jar. Let it steep for 3-5 minutes, or until the noodles are tender.
  6. Give everything a good stir to combine all the flavours. Tuck in and enjoy!
